Reader’s Recipes! How to Make Grandma Lyman’s Homemade Bread

We invited you to send in some of your favorite family recipes, and we are overwhelmed with your responses! We thought we’d kick things off with a favorite food for many of us. As all good cooks and passionate foodies know, making sweet dough rolls is easy, but making great bread is a different matter altogether! Let’s get this month’s featured recipe started with Grandma Lyman’s Homemade Bread.

Ingredients:

  • 1 c warm water
  • 2 T yeast
  • 1 t sugar
  • ½ c sugar
  • 2 t salt
  • 3 c flour
  • 2 c milk
  • 3-4 c flour
  • 2 eggs
  • ½ c margarine - melted

Prep tips:

  • Use room temperature eggs
  • Use room temperature or melted butter/margarine

Pro tip:

  • Have a heart-healthy option by replacing ½ of your flour with a ground whole wheat mixture. Whole wheat mixtures can be a little sticky, as the wheat will soak up additional moisture during the proofing.

Makes 3 loaves or about 20 rolls.

Step 1

Ingredients: 1 c warm water, 2 tbsp yeast, 1 tsp sugar

In a mixer bowl, Add water then yeast, then sugar. The sugar feeds the yeast. Mix until yeast is wet. Let yeast sit and froth for a few minutes.

Pro Tip: Warm your bowl, then add warm water.

Step 2

Ingredients: 1 c warm milk, ½ c butter, ½ c sugar, 2 tbsp salt

In a separate bowl, Put milk in the microwave for about 90 seconds. The milk needs to be warm enough to melt butter, but not hot. Add butter. Add salt. Add sugar. Give it a good stir. Yeast should still be proofing from Step 1.

Pro Tips:

  • If you are using honey as your sugar, spray a touch of oil on your measuring cup to allow the honey to slide out.
  • If your butter is melted, the temperature of the milk doesn’t matter.

Step 3

Ingredients: 1 c milk, 3 c flour

In a separate bowl, add ingredients. Mix 4-5 minutes until smooth like pancake batter. This is necessary to develop gluten.

Step 4

Ingredients: 3-4 c flour, 2 eggs

Beat eggs, then combine all 3 bowls and ingredients and mix. Toss flour onto a counter and knead the dough for 5 minutes.

Step 5

Let rise until double. Shape into loaves or rolls, place in your greased baking sheet or bread pans, and let rise again. Bake!

Rising Tips: Set dough in a warm location, cover with towel.

Step 6

Bake: Preheat oven to 400 F

For loaves: bake 10-12 min at 400 F, turn down to 375 F, bake for another 20-30 min. Thump the loaf after 20 minutes. If it sounds hollow and is nice and brown, it is done.

For rolls: bake 12-15 min at 400 F
